Pasta Carbonara.

If you’ve never tried pasta carbonara, you are seriously missing out! Let me preface it with this… there’s bacon in it. So already the odds are in your favor and even if you somehow managed to screw it up, it will still be pretty damn good. Pasta carbonara is made from a simple list of ingredients, but can be surprisingly more difficult to perfect than you might think. So without further ado, here is my take on a pasta carbonara. I hope it makes your taste buds happy! Let’s get cooking!

Ingredients:

  • 1 lb. spaghetti noodles
  • 1 cup of green peas, cooked
  • 3 cloves of garlic, minced
  • 3/4 cup Parmesan cheese
  • 4 slices of bacon, chopped into 1 inch pieces
  • 3 egg yolks, 1 egg
  • 1/4 cup, reserved pasta water
  • fresh ground pepper

Directions:

  1. Bring a large pot of water to a boil. You will want to salt the water pretty heavily since you’ll be using some reserved pasta water for your dish. Cook the spaghetti according to the package instructions, I usually cook until al dente. Take 1/4 cup or reserved hot pasta water and set aside. Drain the pasta.
  2. Heat a skillet over medium heat, cook your bacon until crisp.
  3. Whisk egg yolks and egg together in a bowl. Add the Parmesean cheese, a dash of salt, and pepper. Whisk well.
  4. Add the cooked pasta into the pan with the bacon, and add in your egg mixture. Make sure the stove is either on the lowest heat or off as you coat the pasta with the mixture. Add in the reserved pasta water and continue to toss the pasta the whole time. You want to continue mixing as much as possible to make sure the eggs don’t cook too much. Add in cooked green peas for color and serve!
