Mama’s Spaghetti and Meatballs.

Growing up I always looked forward to spaghetti and meatball night in our house. It was and still is probably my favorite meal my mom makes. I always begged her to be in the kitchen with her when she would make it because it meant I got to help with the meatballs and roll them. I felt like I was contributing to the dinner and that really sparked my passion for cooking and hosting people around a dinner table. To this day, anytime we have this meal at my parent’s house, whether it be our weekly Sunday dinner or a birthday, I cherish the time I get to spend with my mom in the kitchen making this dish with her. Food brings people together like nothing else and I hope y’all enjoy this recipe as much as we do as a family! So without further ado, let’s get cookin’!

Spaghetti Sauce Ingredients:

  • 1/4 cup olive oil
  • 1 medium yellow onion chopped
  • 2 tsp. minced garlic
  • 2 tsp. oregano
  • 1 Tbsp. dry basil
  • 1 tsp. black pepper
  • 3 Tbsp. fresh parsley, chopped
  • 1 12 oz tomato paste
  • 2 28 oz can crushed tomatoes
  • 2 10 3/4 tomato puree
  • 2 10 3/4 tomato sauce
  • 2 tsp. salt
  • 1 tsp. sugar

Directions:

  1. Saute onions in oil until transparent, then add garlic and spices.
  2. Add in the cans of tomato sauce, puree, crushed tomatoes and paste. Bring to a boil.
  3. Reduce to a simmer and cook covered for 2 hours.

Meatballs Ingredients:

  • 2 lbs. ground beef
  • 1/4 cup dried minced onions
  • 2 eggs, lightly beaten
  • 1 tsp minced garlic
  • 1/4 cup parmesean cheese
  • 1/4 cup bread crumbs
  • 2 tbsp. dried parsley
  • salt and pepper

Directions:

  1. Combine all the ingredients in a mixing bowl. If the meat feels to sticky, add a bit more bread crumbs. If it feels to dry, add a bit of olive oil to moisten it up.
  2. Roll into balls about 2 inches in diameter. Drop raw meatballs into the pot with the sauce and let cook for at least 30 minutes. Check after 30 minutes to see if meat is cooked through.
  3. Serve over spaghetti noodles.
  4. Enjoy!
